Mashed Potatoes



My friend, Marla at Always Nesting, is celebrating her 100th post with a TJ Maxx giftcard giveaway.  Go check it out!  In this post, she also asks you to name your favorite comfort food.  The words food and comfort just go together don't they? I think my subconscious brain lit up when I read the words.  I've been trying to tell my brain for a whole month that January would be starvation time.  We know how that works.  It's like reverse psychology. I almost baked some cookies today before I thought about it.  My fav comfort food is mashed potatoes. Just reminds me of simple times, home and family.  I always make mine with evaporated milk and lots of butter.  Paula Deen's loaded mashed potato recipe is delicious when I'm in the mood to stray from the basic.  Come to think of it, potatoes are good any way you cook them.  Anyone have a good potato recipe they'd like to share?

Hi Tammy, Your blog is showing up just fine on mine now, it was probably just a fluke of some kind. Oh, I LoVe potatoes and my favorite recipe of all times came from a South African lady who was in our church in BC, she just calls it Potatoe Bake. I shall ask her for the recipe and post it on my blog. I make it kind of off the top of my head, so it would be better if I had the real recipe. It is TDF and with all of the real cream in it, I probably would die if I ate it too often. Good luck on dieting, it isn't easy. I have four pounds to go to make my goal at TOPS and I am despairing of ever reaching it. Dumb, huh? Hugs, cindy S.

Wow...evaporated milk?? That sounds so good...rich and creamy. No regular milk at all?

MMmm...that recipe sounds delish! It has two of my favorite ingredients in it; white cheddar and sour cream. Recipes like this make dieting difficult;) Have a good weekend! ~Lisa

just made mashed potatoes last night. But I cheated - used the instant box kind. For the life of me, I can't make them from scratch w/o lumps. Hubster makes them the best.
I did add some Ranch seasoning and they were yummy, IMHO!
But my fav comfort food is STUFFING! Homemade, Stovetop, doesn't matter. Add some gravy and I'm all set.

Try red potatoes. They usually turn out smoother. I don't mind little chunks in mine though. It's all potato, all good!
